Well, I think it goes without saying that most everyone who joins this forum collects the Castle theme. When stating Castle, I am being very broad, including everything such as Fright Knights, Vikings, or anything Bricklink considers to be under the "castle umbrella."
But what else do you collect? Is there anything you have a soft spot for?
For myself, I will mostly buy any LEGO set that is either really cheap (70%+ off), or I think I can salvage for parts without taking a loss.
Apart from that...
-I have all the Star Wars: The Old Republic sets that have been produced on display. -I also have a soft spot for classic ships from the original triology (movies 4-6) such as the X and Y wings both. -In my Star Wars collection I love to collect all the various forms of Tie fighters, from the planet series up to the big boys. -I am a huge LOTR junkie, and have all the sets on display, (including my Helm's deep with 6 Uruk Hai Attack extension walls put in and my Tower of Orthanc) -I collect the hobbit sets -I have some creator sets that I display (mostly the cars such as corvettes because I know i'll never own a real one!)
And finally, I am getting into two themes that I never anticipated getting into; Technic and the Modular builds. I have both the Palace Cinema and Grand Emporium, and I am now resolved to buy as many of these sets as I can. The large Technic builds (2,000 pieces) like the Crane and Off Road 4x4 truck are fantastic too, especially the truck.
So what other themes do you collect? Do you consider yourself to be a collector of any theme other than Castle?

I collect Castle, LoTR/Hobbit, and that's about it. I'll occasionally pick up something like a clearance Chima set that I think has good parts, but I don't collect anything just because I like the theme. It is all parts driven. In fact, I don't have a single official set built at the moment.
Another "theme" that I'm trying to get into is the Great Ball Contraption collabs that many conventions feature. I have lots of technic elements, balls, and motors, but haven't found the time to actually try any modules yet.

I buy Star Wars sets if there are good pieces included, but also if I enjoy the scene in the movie that is represented by the set. For example, two years ago (this weekend, actually!) I bought the X-Wing, and that was displayed as my pride and joy until the most recent Christmas, where I took it apart for the pieces.
I also buy LotR and Hobbit sets when I feel that they're worth the money. I love the films, so I love to get the sets. However, the second line of Hobbit sets has been rather disappointing, so I've only got the Mirkwood Elf Army, mostly for the figures.

I only buy sets for parts, but there are a few exceptions; The imperial flagship is one; I loved that build. I also picked up the Millennium Falcon and X-wing. Some of the larger star wars sets are just too good to use for parts. Also I intend to keep Orthanc up as well. I want to start incorporating Animatronics into my builds so I will probably start buying more technic sets and I am not really familiar with technic yet.

Haha! Awesome. House is slow! PBD is more expensive if you live in WA because of tax. If I need something fast and cheap toy burg has never let me down.

I used to collect the Mars Mission and Aqua Raiders themes when I was younger. I have almost complete collections of both. Now that I am older though, and I want to spend my money on things that count, I will only buy Castle sets or PAB and Bricklink. I also rarely buy sets anyways unless I really need the parts. I guess I also have to say that I have collected pirates and built a few ships. that has stopped for awhile though with Castle taking over and the fact that shipbuilding is extremely parts and money intensive.

I collect anything that has good parts in it. The new Chima legend beasts are a good example. My kids love the new ball and socket joints, and we all love the new small slopes and teeth and the colors are fantastic. Since they are only $10, I've invested in many a copy of them since they are pretty much a parts gold mine.

I must admit, the new Chima sets (not just the Legend Beasts) are darn good. They have plenty of useful and interesting parts, and the Speedorz sets are great fun to play with. Though we've stopped now, my brothers and I always used to go into the kitchen on a Saturday morning and play with them on the table. I got them the track/playmat for Christmas, which is unbelievably tough! Hopefully they'll begin to play again soon.

I actually only buy sets got parts. I've had my eye on those chima beast sets for a while now. However, I do have three official sets still built. These are coincidently the largest sets I have collected some pirates, POTC, and the newest castle theme. (Not sure what the official title is)

I have a few of the previous Chima sets, and I agree the parts are a very nice investment. I have thought about purchasing a couple of the Legends beasts, but I just can't bring myself to pay full price for them now. I absolutely adore the scorpion minifigure as well.
My brother and his wife collect POTC and Harry Potter, but they are incapable of recreating as something as awesome as Alice's Hogwarts.

Currently I am only buying castle and LOTR/The Hobbit, and the occasional Star wars set. Though there was a time when I would buy anything from city to technic. CCG

I buy bricklink. I particularly like the themes of Plastic Bricks Direct and House of Logos, although house it slow sometimes That is hilarious, we shop at both, and the running joke in our house for House of Logos, which has the best mix of parts available and pricing of all the stores on there, is that the LCC deadline will have come and gone by the time Alisha ships it out! We have an order waiting right now, LOL. But you can't beat their amazing prices. PBD is great too. I recommend Toyburg and Buddys Bricks as well. I collect LOTR/The Hobbit sets, Pirates I and II and Pirates of the Caribbean, and my top favorite, the old Johnny Thunder sets when I can get them. Other than these, when I buy sets it's ABC (always buy clearance) for parts. My MOCs are really what I like to keep, when they are worthy and I can afford to commit the parts.

ABC, ha! That's a good one! I often have to buy large sets for parts as I rarely, if ever, keep my MOCs built for a significant length of time.

I love the Lotr/Hobbit sets, pirates of the Caribbean, and some star wars sets. I also like bricklink, but PaB is my main way in which I get legos.
