I'm thinking about pushing out brown bricks to make it look like wooden support beams.

That would look good, or some inverted gray slopes as stone supports would work too.

This looks great! The gray does add a bunch more clashiness to it.

One thing that kind of bugs me is the transition from the tower corner that is over thr center section of the lower levels. I'm semi considering a 1/3/1/3/1 brick going down the middle to make it look like a reinforced tower support.
This woild clash on the othet side as there is a window right in the middle.... so the other choice is to maybe add one more window?

Leave the window on the other side and on this side do the 1/3/1,

I have apparently missed several updates. You are really going strong on this. The larger overhang is definitely better and the balcony on the inner side of the tower really caught my eye. You are going to have something you won't want to take apart when you are done.

Thanks! I hope for it to become a permanent fixture in my collection - potentially just upgraded section by section as time goes by

I like the updated roof with increased overhang. This whole section looks really good.

Thanks! Now I'm itching to elevate the structure by one or two bricks. As of this moment the "cellar" is non existent (with the exception of a secret passageway) and the height is just enough for a minifig to barely clear the ceiling. If I want to stick kitchens and stores there (kind of inspired by what AK is doing) I need more room.... raising the mountain around would be more of a PITA but elevating the floor with couple steps inside and raising the walls of the bottom level should be fairly easy and the way the structure is built it should not be an issue to make it taller.

Yeah, real castles have all sorts of little elevation changes from building to building, with steps up, steps down, etc., so that would be a reasonable way to buy yourself the space for a root cellar or larder.
