Yup - I'm thinking lords kitchen, larder and maybe ale and beer storage There is another building in the keep that will get a sublevel - it's the barracks or rather the soldiers quarters. The sublevel will mainly be armory and potentially a second kitchen. At one point I tried to make the rock elevation go up and down a fair amount but that made it too much work to implement the keep walls so I kinda gave up on it

FYI, if you wait to build the interior until the whole thing is done, you're going to have a hard time A) reaching into the keep to build everything and B) making any adjustments that might be needed to fit everything you want into the interior. Maybe you'll discover that you need the room to be 2 studs wider. Much easier to fix early on than at the end.

I am planning on making the adjustment today (if the little one falls asleep and cooperates with my building schedule ) The bigger concern that I have is how to deal with the secret entrance. That whole section will have to be changed The bad thing is that this might be a permanent WIP.... now I'm also tempted to extend the basement area to have a hallway connecting it to other areas of the castle which will require major rework..... but it's tempting! But it's so much work... I wish I could set aside 3 solid days to just work on it!

Part of being an accomplished MOC'er is not being afraid to re-work sections that you aren't happy with. A little planning can help to reduced that, but there are very few good builds that are built perfectly on the first attempt. Don't worry if it takes you a while. Rome wasn't built in a day, you know! My expectation for my castle is that it will probably take me the better part of a year to finish, haha.

LOL well.. I did start on my castle before the little one was born..... well before she was born... now she's almost 16 months old But then I'm claiming that as an excuse for the delay in the build

Here's I think a direction that I will go with (1 square = 1 stud) I will remove the trap door to the secret entrance and place hidden doorway in the wine/ale store. I am also going to build a hallway to the other sections and hopefully connect them sometime in the future.

Partial floor is laid. Center section removes to expose basement. Lower right corner is stairwell. Part of the floor will be permanently attached as it sits partially underneath the door. The floor has steps built in to raise the floor level. Camera-20150404164804521 by Kejtar, on Flickr

The little one was gracious enough to let me make some progress on the keep. I was able to flip the basement stairs and build the stairs for the access to the upper level. What appears to be landing is what I use to support and "square" the stairs as they are attached to the removable floor.
